Ham Bone Soup

Ingredients

1/2 box (8 oz) elbow pasta

1 1/2 cups celery and leaves, finely chopped

1 white onion, finely chopped

4 small carrots, finely chopped

3 large cloves garlic, minced

1 tablespoon dried rosemary

10 cups water

3 tablespoons dried parsley (1/2 cup fresh parsley)

1 ham bone

1 lb ham chunks (approximately)

1/2 tsp salt

1/2 tsp pepper

Directions

Add the onions, celery, carrots, garlic, ham bone, ham chunks, rosemary, and then the ten cups of water to a large pot.

Bring this to a simmer and cook for an hour.

While that is cooking, cook the elbow pasta separately according to the instructions on the box.

Drain the pasta, then add into the soup mix at the end of the hour.

Cook the soup for an additional 15 minutes.

Remove the bone from the soup.

Cool until you can handle the bone, then remove any bits of meat from the bone.

Add the additional meat to the soup and discard the bone.

Add parsley, then season with salt and pepper.
